Miyagawa Honten is one of Tokyo’s most famous unagi restaurants, having a 125-year history and 20 locations in Japan alone. In Singapore, however, it is known as “Unagiya Ichinoji” rather than its original name. The chefs’ grilling methods, temperature control of the charcoal grill, and special in-house tare whose recipe has been passed down for four generations are thought to be responsible for Miyagawa Honten’s success. To master the skills, the Japanese head chef at Unagiya Ichinoji underwent three months of instruction at Miyagawa’s outlet in Japan.
